The veal round (also known as magatello) from Bahlmann is cut from the animal's hind leg. It is a lean cut, a delicious product that is easy to cook in a pan with seasonal herbs. The meat is soft, tender, and succulent.

Magatello is an exceptionally versatile cut, perfect for roasting and braising, and also ideal for cooking whole and rare, just like a roast beef.
Alternatively, veal round is great for thin slices, scallops, or stir-fries to be sautéed in a pan.
The famous veal tonnato, a traditional Piedmontese dish, is made with magatello veal.

Bahlmann’s philosophy is to select only healthy calves with strong muscle tone. The company works with a small network of carefully chosen local farms, establishing a relationship based on mutual consultation — listening to the farmers and offering solutions to improve animal welfare.
A key factor is that the calves are local, meaning they do not suffer from stress due to transportation. Selection is based on gender, breed, age, and weight. The calves are then moved to Bahlmann’s own farms, where they can socialize and live in a peaceful environment.
