This white tuna stands out for its superior texture and flavorful, tender, and extremely delicate meat.
“Bonito del Norte” refers to albacore tuna, widely found in the Mediterranean Sea. It typically lives in the open ocean and is purchased by Serrats only during the summer season, when—after long migrations—it feeds on sardines, anchovies, and cephalopods.
How is Serrats tuna in olive oil produced?
The process begins with selecting the best and freshest fish, sourced directly from fishing boats returning from the Bay of Biscay in northern Spain. After this careful selection, the fish is quickly transported to the production facility, where it undergoes a double quality check to ensure it meets the company’s high standards for freshness and quality. The fish is then sorted by size.
The tuna is hand-cleaned and cooked at 98°C for about 3 hours. After cooling, the fish is trimmed and cleaned of skin, bones, and excess fat. A second cleaning step removes any dark spots that may remain after cooking. At this point, the fillets and the prized belly cut (ventresca) are separated.
Once these perfect cuts of fish are carefully arranged in tins or glass jars, they are covered with high-quality olive oil. The process ends with one of the most important steps: sterilization. The tins or jars are heated to a temperature between 118°C and 121°C for a period of time depending on the size and type of packaging.
