Pure duck pâté terrine produced by Maison Lafitte, a true flavor of traditional French cuisine. At the very beginning, the company’s founder Pierre Lafitte sold game products, goose and duck foie gras, to local restaurants. Since then, the company – which today is still family-owned – has grown and offers a full range of products which share Pierre Lafitte’s original mission: to offer his customers the best “Landaise” duck on the market!
The ducks used to make foie gras come from an old Mulard variety, which is considered the best duck for foie gras. A hardy breed, the Mulard is a cross between a male Barbary and a female Rouen or Pekin. It is characterized by slow growth and is recognizable by its white and black coloring: a distinctive feature of absolute quality. There are 3 different types of foie gras available on the market, which differ in the quality of the liver or parts from which the foie gras is made:
- “Foie gras entier”, made from whole or assembled higher quality livers, which Lafitte uses primarily for preserved products or escalopes, as they are perfect for special cooking at high temperatures.
- “Foie gras”, made of assembled pieces of foie gras, ideal for cooking in a pan.
- And the “fois gras bloc”, which is a foie made from several pieces of liver and, as it loses a lot of fat when cooked, this type of fois gras is used for terrines or confits to be consumed at room temperature on a slice of toast.
Tips for using the product
It is recommended to serve foie gras at the beginning of a meal, when the palate is still clean so as to fully appreciate its round and complex flavor. A portion consisting of approximately 40 to 50 g of foie gras per person is recommended. Any type of foie gras should be chilled in the refrigerator a few hours before being served and should be put on the table 20 minutes before serving.
Foie gras should never be spread on a slice of bread with a knife: to appreciate the buttery and refined taste of foie gras to the fullest, a fork and a small piece of toasted bread – preferably brioche or baguette – are ideal.
The company
Founded in 1920 by Pierre Lafitte, in the typical village of Montaut in Chalosse in the French Landes, the company offers the best Duck Foie Gras produced in the area.
Lafitte’s ducks come from an ancient, slow-growing duck variety and are fattened with whole non-GMO corn grains. All Lafitte preserves are crafted using traditional artisanal methods, without the use of additives or preservatives.
