In 2010, Tartuflanghe was the first company in the world to present the innovative “No H2O” freeze-dried truffle: 100% freeze-dried fresh truffle, obtained through the physical extraction of all the water present in the fresh truffle, without any additive or chemical process. Thanks to this technique, the White Alba Truffle can also be enjoyed when it is out of season and consumed all year round, maintaining those distinctive characteristics that have made it famous around the world.
An innovative product that makes it possible to keep the intense fragrance and flavor of fresh truffles intact over a long period of time, so that they will stand out in any hot dishes.
A truffle that is preserved at room temperature for 24 months and that maintains the characteristic taste of fresh White Alba Truffles, with surprising persistence. This innovative, brand-new technique does not involve any type of chemical manipulation: it is exclusively a physical process, based on a principle of drying in a vacuum environment depriving the truffle of water, the main element responsible for its rapid deterioration.
While a part of the strong scent given off by the truffle’s most volatile aromatic fractions is dispersed, it is possible to maintain (encapsulate) the aromas that evaporate in the product at high temperatures, as well as maintaining the characteristic taste of the White Alba Truffle.
Tips for using the product
Add the dehydrated white truffle after the dish has been prepared, as you would with a fresh truffle. To emphasize the unique flavor of the truffle, crumble it on a hot plate and wait 2 to 3 minutes, so that the moisture of the dish can help release the distinctive truffle aroma and taste. Ideal for any type of pasta, particularly on egg pasta creamed with butter, olive oil or cheese, on risottos, soups, cheese fondues, eggs and potatoes.
