The Gentile salami is named after its casing, with its key feature being the selection of meats used and the possibility (thanks to the fattier casing) of long aging periods.
The use of Lambrusco wine in the seasoning and the very low percentage of salt make this salami fragrant and sweet. To fully enjoy it, it should be sliced, according to tradition, with a thickness equal to that of a black peppercorn, and the cutting technique used is one that allows for an oblique slice.
How is Gentile Salami made?
The meat, after being ground to a medium texture, is mixed with black peppercorns, salt, and flavored with finely chopped high-quality garlic, filtered with wine.
Once this special blend is created, which gives the product its unique flavor, the salami is stuffed into the so-called "gentile" casing, made from the pig's rectum, and tied by hand using natural twine.

A small workshop in Diolo di Soragna where everything the pig has to offer is produced. The artisanal production process strictly follows the consortium guidelines, and the aging takes place in humid, ventilated cellars typical of the Parma lowlands, where it develops unmistakable flavors and aromas.
