The African Bird's Eye Chili, also known as "piri piri" or "pili-pili", are slender chilies that require significant care in cultivation compared to other spices. The bitter pods start off green when immature, but when ready for harvest, they turn a bright purple-red. Native to Madagascar, this chili is widely used in Africa but is actually the fruit of the capsicum frutescens plant, which also grows in the tropical forests of Sudan and was introduced to Europe by Portuguese colonists.
Sambava Épices has selected a high-quality Pili-Pili from the central mountain regions of Madagascar. Given its spiciness, it is recommended for those with bolder palates. It is harvested in the Fianarantsoa region, the Highlands of Madagascar, characterized by alternating hills and valleys with a warm temperate climate.

Along with oil, pili-pili is the main ingredient in seasonings and marinades: it is used on vegetables, meat, and fish. Pili-pili sauce is a traditional Malagasy recipe made by mixing chili, lemon (or vinegar), oil, and garlic. The thick, colorful sauce works wonders on roasted chicken or "devil" octopus.
