Rare and highly appreciated, wild black pepper grows only at high altitudes in the unspoiled forests of Madagascar, in the island's mountainous areas. When fully ripe, it has an alluring bright red color, and it is at this point that it is harvested – a difficult and dangerous task. The wild vine that produces the pods of this highly sought-after pepper grows around tall trees, reaching heights of up to 20 meters. The small, oval, brown-red pods feature a characteristic dark brown stem and are hand-picked and processed by the local population.
Sambava Épices has directly selected the production areas and is currently the only company in Madagascar that practices sustainable harvesting of the product. This extraordinary pepper is a true explosion of aromas, with its long-lasting fruity notes and citrus and floral undertones. It is harvested in the Fianarantsoa region, the Highlands of Madagascar, known for its alternating hills and valleys, with a warm temperate climate. This region also produces white pepper and red chili.
Usage Suggestions
Used just like black pepper, it has a pleasantly fresh flavor, with spicy hints of fruit and wood. It is also delicious when added to fresh fruit salads, ice cream, sorbets, and sweet-sour dishes. It is particularly tasty when added to pork and lamb dishes, as the locals use it fresh in their rice and meat-based meals.
