The peppercorns are the fruits of a climbing plant that grows on trees and shrubs, reaching heights of up to five meters. They are harvested before full maturation if black pepper is to be produced. The berries are immersed in boiling water for two minutes and left to macerate overnight. They are then sun-dried, acquiring the typical black color.
The peppercorns come from the best producers who are able to meet the high-quality standards required by Sambava Épices. The peppercorns are rich in essential oils and offer intense aromatic notes. The selection process is carried out by hand to ensure the highest quality, with attention given to both texture and color.
