Ricardo Fuentes, founder of the company of the same name and pioneer of red tuna farming in Europe, is now a world leader in the production of this particular variety of tuna raised in the Mediterranean between Spain, Malta, Tunisia, Morocco and Portugal.
Bluefin Tuna: the King of the Mediterranean
Bluefin tuna is a special fish, the noblest of the many existing varieties. After migrating to the warm Mediterranean waters, the tuna that lived in the wild in the cold northern seas are transferred to the open-sea farms of Fuentes, fed completely naturally with sardines and mackerel and caught only at the direct request of customers. All bluefin tuna are wild adults, caught using sustainable fishing techniques. Today, red tuna represents one of the gourmet ingredients par excellence, enhanced by Japanese cuisine, which refers to fillet by Akami Maguro and belly by Otoro.
A sustainable fishing
Fuentes makes sustainability its strong point: uncompromising quality that ensures absolute excellence for the end customer. Only at the end of the bluefin tuna migration do Fuentes vessels set out in search of them. After locating the shoal of tuna, a barge is lowered from the boats, dragging a net around the shoal to catch the fish without stress. In this net, the fish are moved slowly toward Fuentes' sites. Once at their destination, the tuna are gently transferred to the resident nets where they will begin the rearing phase.
