"La Chinata" paprika is an artisanal smoked paprika, one of Spain's finest products, the "Pimentón de la Vera," a product with a Controlled Designation of Origin. The name "La Chinata" comes from the name of the inhabitants of the village of Malpartida de Plasencia, where the founder, Florentino Oliva, was born. The distinction between the different types of paprika (Sweet, Sweet-Sour, and Spicy) does not refer to the smoking process, which remains delicate and never overpowering, but to the type of pepper used. The spicy version, made from Jeromin peppers, is perfect for those who enjoy bold and pungent flavors. It is ideal for adding a bold and exotic touch to your dishes.
History tells us that the peppers used in the production of "Pimentón de la Vera" come from the New World discovered by Columbus in 1492. Upon his return from the journey, he offered these fruits as a token of gratitude and devotion to the monarchs of the time. The event took place in the Monastery of Guadalupe, from where, according to legend, the monks spread the cultivation to all their monasteries across Spain. Thanks to this incredible journey, the peppers reached the Monastery of Yuste in the La Vera region, where priests introduced them to nearby villages and regions.
The main feature of this paprika lies in its smoking process, which over the centuries has become a distinguishing trait compared to other production areas: the typical autumn rains in the Vera region prevented natural drying under the sun. As a result, local farmers were forced to design an alternative process, namely drying with oak smoke. This drying process gives the "Pimentón de la Vera" a distinct aroma, a deep and rooted flavor, and color stability, setting it apart from any other paprika powder.
The Company
The company was founded in 1975 by the Oliva family, who have specialized over the years in producing the highest quality smoked paprika. A product made entirely in its land of origin and subjected to strict controls, from the moment the raw material is purchased from farmers to the production of the finished product.
Cecilio, son of the founder Florentino Oliva, is the general manager: his great commercial vision and experience make him the soul of "La Chinata". Javier, Cecilio’s eldest son, joined the company in 2007 and oversees the international market. Finally, Carlos, the youngest son of Cecilio, has been working at "La Chinata" since 2009 as the head of the Purchasing and Quality Departments, obtaining the IFS Quality Certification.
