“Bonito del Norte” refers to albacore tuna, widely found in the Mediterranean Sea. It typically lives in the open ocean and is only caught by Serrats during the summer season, when—after long migrations—it feeds on sardines, anchovies, and cephalopods.
How is Serrats tuna in olive oil made?
The preservation process begins with selecting the best and freshest fish, sourced directly from fishing boats returning from the Bay of Biscay in northern Spain. Once selected, the fish is quickly delivered to the production facility, where it undergoes a double quality check to ensure it meets the company’s high freshness and quality standards, and is then sorted by size.
The tuna is cleaned by hand and cooked at 98°C for about three hours. After cooling, it is trimmed and carefully cleaned of skin, bones, and excess fat. A second cleaning removes any dark spots that may remain after cooking. At this point, the fillets and the belly (ventresca) are separated.
These premium pieces are then carefully arranged in tins or glass jars and covered with high-quality olive oil. One of the most important final steps is sterilization: the tins or jars are heated to a temperature between 118°C and 121°C for a time that varies depending on the size and type of packaging.
