Turmeric is a root from the Zingiberaceae family and is also known as "Indian saffron." Once the root is sun-dried, it is ground into a bright yellow powder. The rhizomes of the Malagasy varieties contain a relatively high percentage of curcumin, which is considered a powerful antioxidant. Sambava Épices' turmeric comes from the Falaises, which descend from the mountain regions of central Madagascar to the city of Toamasina.
The aroma is vaguely reminiscent of saffron, with more bitter and acidic notes – but never unpleasant – that enhance the slightly musky, bitter, warm, and full-bodied flavor.
Chef’s Tip
Turmeric is considered a superfood because it is rich in curcumin, highly beneficial, starch, potassium, and vitamin C. Ideal for dishes based on white meat, risottos, creamy soups, fish, and spreadable cheeses. A great addition to potatoes, cooked fruit, yogurt, and sauces, it also works well as a seasoning for salads. It is best expressed when used cold, at the end of the cooking process, to preserve its properties.
