The Heart of Ham is a cured meat obtained from the processing of the heart of the pig’s hind leg, salted and aged. It is recognized for its typical rounded shape, its aroma, and its particularly sweet taste.

It is a true delicacy in appetizers, wrapped around breadsticks at buffet aperitifs, and is perfect for garnishing sandwiches and focaccia. It is also used for filling stuffed pasta.

What makes Heart of Ham special?

The Heart of Ham may have originated from an accidental cut of ham or, more likely, from the need to better dry the salted pig’s leg in a very humid climate.

The salting of the Heart of Ham requires particular skill from the butcher: it is done in several phases over several days. After evenly sprinkling the meat with salt, the producer intervenes every two or three days, massaging the cut and adding salt sparingly. The goal of this phase is to soften the meat without losing its characteristic sweetness.

After salting, the meat rests in refrigerated rooms. Then, the skinless part is covered with a fine adrenal fat, lard from the pig. This allows the salami to age for a period ranging from twelve to eighteen months. The aging takes place during the winter months in humid environments, which gives the product its characteristic flavor.

A small workshop in Diolo di Soragna where everything the pig has to offer is produced. The artisanal production process strictly follows the consortium guidelines, and the aging takes place in humid, ventilated cellars typical of the Parma lowlands, where it develops unmistakable flavors and aromas.
