Confit is a typical recipe of southwestern France that consists of cooking meat, fish or fruit in fat or sugary water. A prolonged cooking that produces a sweet or salty “jelly” used to accompany a main course. This version, made with Gewurztraminer grapes, is the perfect pairing for any type of foie gras, from a pan-fried escalope to preserved foie gras.

Pure simplicity, for an haute cuisine starter: simply serve the foie with a nice slice of toast and a spoon of confit, for an exquisite and harmonious explosion of flavors. Since the 18th century, Strasbourg has been known as the great capital for the production of Foie Gras in France.

In fact it was in Strasbourg, under the reign of Louis XVI, around 1780, that Jean Pierre Clause, chef of the Maréchal des Contades governor of Alsace, created the first “Foie gras de Strasbourg”. Since then, the reputation of this delicacy has spread all over the world and the name of Strasbourg is synonymous with a foie of superior quality representing, for over a century, the “Foie Gras Capital” in the world.

Today, the George Bruck company is in its 5th generation and continues to operate as a family-run business: an atypical circumstance compared to other producers in the area, the symptom of an artisanal philosophy handed down from father to son and fundamental for a quality “fatty liver”. The second aspect – and the real trademark of George Bruck fois gras – is the use of a blend consisting of more than a dozen spices. This unique mix is still top secret to most, a recipe exclusively passed down from father to son: it is precisely this blend that gives George Bruck fois gras its unique and unparalleled flavor and taste.

After being deveined, salted and seasoned, the fattened liver is cooked and, thanks to the careful processing, it becomes – in our humble opinion – the best foie gras in the world.
