The Classic Raw Milk Butter, also known as unsalted butter, is a staple in French gastronomy. Butter is essentially the product obtained from cream derived from cow's milk. It is composed of fat (80%) as well as some components of the cream (water, lipids, pigments, proteins, lactose, and some salts).
The difference between cream and butter lies in the fact that in cream, the fat is dispersed in the water, while in butter, it is the water that is dispersed (in the form of droplets) in the fat: this transformation is induced by the butter-making process.
But why does raw milk butter differ so much from pasteurized butter?
Because it reflects the production territory: raw milk butter changes throughout the year. For example, in the spring-summer period, it will be even tastier and a deeper yellow. This is because dairy cows have the opportunity to graze on fresher, greener grass, and their milk will be much richer in taste and intensity.
