Pintxos (or pinchos) are a variation on the classic Tapas typical of northern Spain, especially popular in Basque Country, Navarre, Castile and León. Like Tapas, they are small meat or seafood dishes, consumed as an aperitif or appetizer. The origin of the word Tapas comes from the Spanish verb “tapar”, in reference to the custom of taverns to cover beer or wine with a piece of bread and Jamón (typical dry-cured ham), to keep insects or dust out.
The Baccalà Pintxos from Giraldo’s Premium line, company operating in the city of Vitoria in the heart of Basque Country, south of Bilbao, are small codfish fillets selected from the side of the head. As they are portioned into cubes, Pintxos are ideal for a quick fried dish or, even better, for making tempura.
The company’s origins date back to the 1970s, when the Giraldo family ran a grocery store in Vitoria. Giraldo’s forward-looking business vision inspired them to specialize in the production of baccalà, changing the way the product is conceived. Giraldo offers customers a codfish caught in the clear waters off the coast of Iceland and the Faroe Islands where, according to experts, the best cod in the world is found, the authentic Gadus Morhua.
