Giraldo’s “Ready to Cook” products are the latest arrivals in the Longino & Cardenal range: Lomo Autor is the Lomo Fillet Especial, packaged in practical single portion bags that require only one step before being served.
A healthy and quality Gadus Morhua fillet, the bluefin tuna of the cod family found in the North Seas, prepared and served quickly based on the customer’s preferences:
- cooked in a steam oven at 60 °C for 8 to 10 minutes;
- cooked in a microwaved at 700 W for 60 to 90 seconds, after which the fillet should be allowed to stand for 1 minute;
- cooked using the bain-marie technique, keeping the product inside the bag for 5 minutes.
Giraldo cod is fished exclusively by hook and longline in the cold waters off the coast of Iceland and the Faroe Islands. As soon as it is caught, the Nordic codfish undergoes a first salting on board the fishing vessels while it is still whole. The boats return to port within a maximum of 12 hours, preventing the cod from deteriorating. At this point the cod is cut in half (using the traditional Nordic open book cut) and then placed back under salt where it is kept for 2 to 4 months.
Giraldo collaborates exclusively with carefully selected and historic partners and, over the years, it has developed a unique desalting and draining process that has become a trademark of the brand.
