The Barrosa loin is a top-quality cut of beef, aged for 12 days. It is one of the largest cuts that can be taken from cattle, as it includes the entire back. From the bone-in loin, you can obtain the Fiorentina or T-Bone, the Porterhouse, and rib-eye steaks.

The loin is one of the most versatile cuts of beef. The rib-eyes are typically cooked quickly on the grill; in general, the whole loin benefits from quick cooking at high temperatures.
What is Barrosa beef?
The Barrosa is a breed native to the Northwest of Spain, near the Portuguese border.
Its history traces back to the Mauritania species, which arrived in Portugal through contacts with North Africa.
This breed is particularly known for its large horns, which can exceed 100 cm in length. Living in the higher regions of northern Portugal, these animals graze freely.
At the beginning of the 20th century, the population of this breed was very large, with over 200,000 cattle. However, due to the industrial revolution and the introduction of machinery and commercial breeds, the Barrosa became increasingly rare. By 2005, only about 7,000 heads remained.
