Burrata has become a true cult of Italian cuisine, an ingredient loved by all. Our burrata is made from stracciatella protected by an outer shell of thin pasta filata, similar to that of fiordilatte: it is composed inside of cream mixed with milk enzymes and small scraps of mozzarella.

When great-grandfather Luigi Guffanti began aging Gorgonzola in 1876, his genius intuition was the purchase of an abandoned silver mine in Valganna, in the province of Varese.
